In stark contrast to the bleak, harrowing, bitter-cold winter, the Rolvsøy summer offers an abundance of wild flowers that the bees can gather nectar from. This is what gives honey from Rolvsøy its unique flavour. In particularly good summers, the bees are out while the cloudberries bloom, producing the exclusive cloudberry honey.

Keeping bees at this latitude is challenging in many ways. The bees need warmth to produce honey, and the coast of Finnmark can be a merciless place. But during good summers, an intensity of flavour results that can’t be found anywhere else. The constant light of the midnight sun makes the ground abound with wild flowers and herbs, from which come exclusive delicacies and tastes.
As Siss Heidi herself puts it: ”Nature is a treasure trove”.

In good years, the bees can gather nectar from the cloudberries’ flowers during early summer. They give an exclusive honey with a fruity flavour and a hint of malt.
Cloudberries ripened under the midnight sun, for pure enjoyment or decoration. These specially selected cloudberries taste excellent with a glass of fine cognac.
Rhubarb jam with angelica
A northern classic. A fresh taste of rhubarb with spicy hints of wild angelica. Try it with waffles and crème fraiche.
Purée of chive stalks. Gives a delicious, fresh flavour to salads, dressings, pasta, soups, sauces or dips. Eccellent with salmon or trout.
Extract from the dandelion flower. The taste resembles honey, and is suited for desserts, ice cream and cheese. Also excellent as a sweetener for herbal tea.
Delicious, fresh cloudberry jam. A short boiling time gives a tasty jam with many whole berries.
